Eddy Ancasi is executive chef and co-owner of Las Canteras Restaurant & Bar in Washington, DC. Ancasi, a native of southern Peru, learned cooking in various kitchens in the Peruvian city of Arequipa. After arriving in the U.S. in the mid-1980s, he served in several Peruvian restaurants in the Washington, DC area. Ancasi divides his focus on the traditional Peruvian specialties such as Cebiche and Lomo Saltado and the novoandino dishes increasingly popular on the Peruvian gastronomical scene.

Las Canteras Restaurant & Bar, opened in April, 2007, has quickly risen to become the the leading destination restaurant for gourmet Peruvian cuisine in the mid Atlanti. It has received critical praise in the food columns of the Washington Post, and other national publications.
