I was born on September 2nd 1973 in Lima Peru. I used to work on a deli back in 1996 in San Francisco which was the first job I ever got involved with food & beverage so to speak. After that I went to Japan to work for a company just to make money for 9 months. I saved some money and began my passion for Japanese food. (I kinda found my roots again since my mom comes from a Japanese family) After that I decided to become a professional chef. I graduated at Universidad San Ignacio de Loyola in 1999 and started paying my "dues" at Pantagruel (novoandine cuisine).

After two years of moving from restaurant to restaurant and either not getting paid well or at all I decided I had to work for myself. The good thing about moving so much was that I learned different styles of working and showed me how to treat your employees. That's when Osaka was born. Osaka is a Peruvian oriental restaurant even though is mainly based on Japanese sushi. We started our first one in "Asia" (100 km from Lima) for the summer and then moved to the city the next year.

After that we opened again in "Asia" and finally moved to Buenos Aires Argentina where I've been living for the past 2 years. We have plans to open another restaurant here in Argentina but a different concept and hopefully open one in Hollywood 2009.
