Alvaro Raffo, Restaurant 73
Alvaro Raffo is the executive chef of Restaurant 73 in Lima, Peru. He attended the Institut Paul Bocuse in Lyon, France and graduated with both a culinary and business degree. He then went onto to pursue his passion at two restaurants in France, Restaurant Il Cortile and Hotel du Castellet. Alvaro then moved to Spain as pastry chef for La Casa del Temple.
In 2004 Alvaro moved back to Peru where his talents were treasured at the Machu Picchu Pueblo Hotel & Inkaterra Café before making his way to Restaurant 73.
