Carlos Ramos
Food & Beverage Director, Latin Bites Contemporary Cuisine

Carlos Ramos began his career in the restaurant industry at an early age when his family opened a "cebicheria" in his hometown of Lima, Peru during the early 90's. This first-hand experience sparked his interest in what would be a 20-year journey through several restaurants such as "Mariposa" at Neiman Marcus and "Oyamel" by Jose Andres, in which he worked all positions in the front of house.

Even though he holds a Bachelors degree in Journalism and a Masters degree in Education, his true passion has always been around serving food and drinks. Ramos realized his dream of having a restaurant of his own when he joined Roberto and Rita Castre in their first venture: Latin Bites Catering. The small home-based catering company created a big buzz allowing them to soo turn into a brick and mortar restaurant: Latin Bites Café.

Latin Bites has positioned itself as one of the most important Latin American restaurants in the city, as well as recognized among Houston's Top 100 restaurants, 4 years in a row, by the Houston Chronicle.

After four years as Latin Bites' Beverage Coordinator, Ramos took over the kitchen in July 2015 when Roberto Castre went to open a new restaurant in Washington D.C. Ramos is currently working on adding new menu items to keep up with the challenging and ever-changing Houston dining scene.
